The Company

Catering Manager/Head Chef  
Based in Lagos Nigeria
Our Client provides a Logistic base for deep water, Offshore Oil &
Gas Operations and are located in Lagos.
The Role

Skills/Knowledge:
  • A culinary qualification or similar is essential

  • Must be computer literate

  • Minimum 3 years' experience as a Head Chef/Catering Manager

  • Must be able to work with a multi-cultural work environment

  • Menu Costing

  • Passion for training and development of people 

  • Good waste management skills

  • Diligence and self-motivation to meet deadlines and keep on top of your job

The Person

Job Specification
Role Purpose:

Plan and direct
food preparation and cooking activities. Prepare and cook meals and specialty
foods.

Ensures that a high
quality of food is being served in accordance with Company standards and HACCAP
controls. Leads and supervises the kitchen staff for the purpose of producing
high quality food. Practices portion control, quality control, waste control
and product preparation techniques

Key Tasks and Outcomes:
  • Supervise activities of chefs in the section and/ or entire kitchen

  • Place orders of all food requirements according to Company policies and procedures.

  • Management of all stock control, stock rotation, orders and stock takes

  • Staff scheduling

  • Performance management of staff including discipline

  • Ensures appropriate health and safety standards, Eatsafe and HACCAP practices

  • Ensures setups for functions completed in line with function sheets.

  • Ensures that complaints are handled without delay and that effective follow up and action plan is made in order to avoid similar issues.
